Do you eat tomato sandwiches where ever your from? In the South this is a really common Summer food. Why do we wait until Summer well because that is when we have big, bright and plump tomatoes growing in the garden of course. I grew up eating these simple sandwiches and they never get old. Usually they are just made with fresh white bread, but I do enjoy them toasted a little more. Again, the key is fresh sweet tomatoes. If you have never tried it, then you’re in for a surprise. Go ahead and test it, then get back to me. We also love to pair it up with an ice cold glass bottle coke, nothing better I swear.

1 ripe tomato, sliced in thick slices
salt and pepper
4 slices of white bread (you can toast if you like)
Mayonnaise

1. Sprinkle salt and pepper all over the tomatoes on both sides. Add mayonnaise on the bread, then add the tomatoes.

Yields: 2 sandwiches
