Strawberry Muffins

mom always used to bake a batch of muffins on weekends and I always loved
biting into a warm and fluffy muffin fresh from the oven. I still enjoy
whipping a batch up and serving them to my own family now. Although I do not
discriminate I love to have these at any time of the day. You can really use
any fruit that you may like with this recipe I personally just really like
strawberries or blueberries in mine.
3 cups all-purpose flour
2 cups sugar
1 tablespoon baking powder
2 teaspoons vanilla extract
3 eggs
1/2 cup softened butter
1 cup milk
1-1/2 cups fresh strawberries, diced
1. Preheat oven to 400F.
2. In a large mixing bowl, whisk together
flour, sugar, and baking powder. Add vanilla extract, eggs, butter and milk,
stirring until just combined. Fold in strawberries.
3. Fill muffin cups up half way and bake for
about 20 minutes or until a toothpick comes out clean.
Yields: 1 dozen

    I love biting into tart fruit pieces in mine as well. I have cherries and apricots I need to use up soon.
