Oreo Brownies


What do you all go for when you have a sweet or better yet an all chocolate craving? For me it’s always brownies and the reason is that they are pretty simple and quick to make. I mean when I get a craving I want it right then not hours later. I was out of nuts (which I LOVE in brownies) so I went with Oreo cookies and peanut butter. I sure love my peanut butter. Actually not long ago I burned my leg pretty bad with the iron and I had a scar that would not seem to go away. I had told my mother and sister in laws and they gave me some scar cream. They said “Noor you should love it because it smells just like peanut butter” and I was like “why would that make me like it?”

I mean I do not remember talking about peanut butter before or declaring my love for it. And then they told me “you Americans love your peanut butter so much”. And I thought about it and you know they were right because we do. Peanut butter makes everything taste better right? And hey chocolate and cookies do not hurt either.

1/3 cup unsalted butter
1/2 cup unsweetened cocoa powder
1 cup granulated sugar
2 eggs
1 teaspoon vanilla extract
1/2 cup all purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1 cup crushed Oreo cookies
Peanut butter

1. Preheat oven to 350 degrees. Grease and flour an 8 x 8 inch baking dish.

2. Melt butter in a skillet over medium-low heat. Once melted, mix in cocoa powder. Allow to cool 10 minutes. Whisk sugar into cocoa mixture. Whisk in eggs one at a time. Whisk in vanilla. In another bowl combine flour, baking powder and salt. Slowly whisk into the cocoa mixture. Fold in crushed cookies.

3. Add about 4 small dollops of peanut butter on the top and with a toothpick carefully move it around until a marbled look appears. Bake in preheated oven for 25 – 30 minutes or until a toothpick inserted comes out with just a few crumbs on it.

4. Allow to cool, slice and serve.

Yields: 1 dozen

    I’ve made this recipe twice in the past fortnight. They are heavenly! I made the second batch as cupcakes and we finished them in one day. I love how easy this recipe is, no need to melt chocolate like in many other brownie recipes. Thank you!
