How to Make Perfect Hard Boiled Eggs

I used to have no idea about how to make the perfect hard boiled egg. I would stick the eggs in the pan and let the cook forever thinking that was the right way. Little did I know it was much more simpler than what I was doing and only took a few minutes at the most. I make quite a bit of these eggs around here so I finally learned the correct way and not only is quicker, but they also peel easy as well.

1. Place eggs in a saucepan carefully. Cover them with cold water by 1 inch and a teaspoon of salt. Bring to a full boil then remove the pan from the heat and allow to sit for 12 minutes.

2. Pour the water out and run cold water on the eggs, allowing to sit for a few minutes. Carefully crack the egg and slightly roll it on the counter so that it cracks all over and then gently peel.

Is this Emerils recipe? My sister taught me this and they come out grey free which I love. Perfectly yellow inside!

Oh well this is how we make them always and they come out perfect. 11 min! Sometimes salt sometimes vinegar. Both help the shell loosen up. Now I may make me deviled eggs!

Do you just add the vinegar in place of the salt? I will try that and how much?
