Kuwaiti Fish Stew


This month MENA Cooking Club visited Kuwait and we had some lovely dishes to choose from. I have to admit that for me this month was the hardest, so far as I found there is virtually no recipes from Kuwait in English and not much information about the food culture. This month I chose the soup option which was fish stew, you all know I love soups and stews so I was really happy to make this one. One thing I did learn was that Kuwaitis use a lot of seafood in their dishes such as this white fish I put into the stew. Of course, like most Arabic meals, rice is served on the side and ate with the stew.


2 white fish fillets, cleaned, deboned and cubed
2 garlic cloves, diced
1 small white onion, diced
2 tomatoes, diced
2 tablespoons tomato paste
2 cups water
1/2 cup frozen green beans
2 teaspoons ground cardamom
2 teaspoons ground cumin
1 teaspoon ground turmeric
Salt and pepper, to taste
1 tablespoon olive oil

1. In a 4 quart pan on medium heat, add oil. Add cardamom, cumin, turmeric, salt and pepper, mix then add fish. Cook on each side for about 30 seconds.

2. Add cloves, onions, green beans and tomatoes, mix well then carefully add water and tomato paste, mix. And bring to a full boil, reduce to low, cover and allow to simmer for 30 minutes.

Yields: 4 servings
