Growing up making gingerbread men was always tradition in my house. Now that I am older I make these special cookies for my family as well. I love the subtle flavors of the spices in this recipe and I love the various decorating techniques you can use on your own little men. I always make cookie icing which I have gave you the recipe below and I apply it with a toothpick. I have found that its much easier then piping it. I use various candy toppings and mini m&m’s as well. Have fun with your men and try not to eat them all. Hey they may take awhile but gingerbread men are known for being labor of love. These cookies just pair perfect with coffee or hot chocolate.
5 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1 cup (2 sticks) unsalted butter
1 cup packed dark-brown sugar
4 teaspoons ground ginger
1 teaspoon nutmeg
4 teaspoons ground cinnamon
1 teaspoon ground cloves
1 1/2 teaspoons salt
1 cup molasses
1. Sift together flour, baking soda, and baking powder into a large bowl. Set aside.
2. Put butter and brown sugar in a large mixing bowl; mix on medium speed until fluffy. Mix in spices and salt, then eggs and molasses. Reduce speed to low. Add flour mixture; mix until just combined. Divide dough into thirds; wrap each in plastic. Refrigerate until cold, about 1-1/2 hours.
3. Preheat oven to 350 degrees. Roll out dough on a lightly floured work surface to a 1/4-inch thick. Cut with cookie cutter. Space 2 inches apart on baking sheets lined with a non-stick baking mat.
