Coca-Cola Cake

Coca-Cola is about as Southern as it gets.
In fact it’s so much a part of our heritage that all Southerners collect Coca-Cola memorabilia me included. If you’re wondering why the company started in
the South in Atlanta, Georgia just short of a few hours from where I was born
and raised. For years Southerners have been making recipes that involved the
classic drink. This recipe is one of the most popular cakes you will find in our
area. Restaurants like Cracker Barrel serve this dessert daily and it’s
amazing. The original recipe calls for 1-1/2 cups marshmallows so if you like
or have them go ahead and add them it makes it much better but unfortunately I
was out.

Cake:
2 cups sugar
2 cups all-purpose flour
1/2 cup butter
1/2 cup sunflower oil
3 tablespoons cocoa
1 cup Coca-Cola
1 teaspoon baking soda
1/2 cup buttermilk
2 eggs
1 teaspoon vanilla extract
Frosting:
1/2 cup butter
3 tablespoons cocoa
6 tablespoons Coca-Cola
1 box (16 ounces) confectioners’ sugar
1 teaspoon vanilla extract
1. Preheat oven to 350 degrees.
2. In a bowl, sift sugar and flour. In saucepan,
mix butter, oil, cocoa, and Coca-Cola. Bring to a boil and pour over dry ingredients;
blend well. Dissolve baking soda in buttermilk just before adding to batter
along with eggs and vanilla extract, mixing well.
3. Pour into a well-greased 9-by-13-inch pan
and bake 35 to 45 minutes. Remove from oven and frost immediately white still
warm.
4. To make frosting, combine butter, cocoa and
Coca-Cola in a saucepan.  Bring to a
boil and pour over confectioners’ sugar,
blending well. Add vanilla extract.  Spread
over hot cake. When cool, cut into squares and serve.
Yields: 1 9×13 cake
