Last year I ordered some popsicle molds off Ebay and quickly started making some of my own recipes. I love popsicles especially in this dry heat. This Summer I told myself that I was going to come up with some new recipes since I loved them so much last year. One great thing about Saudi is they sell a lot of fruit juice in all kinds of flavors like fresh strawberry juice. Talal and I love pouring some in the molds and freezing them, it’s so good. For awhile now I have had in in my mind that I wanted to make some chocolate pudding style pops, but using Saudi qashta. I love taking traditional things and making it a little modern.
Everytime I make my chocolate biscuit dessert I love the chocolate qashta filling so much that I could literally eat it with a spoon. So that is what had given me the idea in the first place. This past weekend I finally remembered to grab a few cans of qashta for my recipe. So last night I got the everything out and whipped them up and waited until they froze the next day to try them. I was crossing my fingers and sure enough, they were great even more so than I thought they would be. Move over Jello pudding pops!
2 (170 gram) cans of qashta (I just bought what was on sale)
2 tablespoons unsweetened cocoa powder (I used Hersheys)
2 tablespoons white sugar
2 tablespoons milk (I used full fat)
1/2 teaspoon vanilla extract
1. In a mixing bowl, add qashta, cocoa powder, sugar, milk and vanilla. With a hand mixer, mix well. With a spoon carefully fill popsicle molds to the top. Place tops on then place in the freezer over night.
