Chickpea and Pasta Soup

This is a really great soup to serve with freshly made bread. Your family will appreciate the uniqueness of it. This is a traditional Italian soup with all the flavorings to give it away.

3 tablespoons olive oil
2 garlic cloves, chopped
1 carrot, chopped
1 celery stalk, chopped
1 onion, chopped
1 teaspoon dried rosemary
1 can of chickpeas, drained
1/4 cup of small pasta
Salt and pepper to taste
1 tsp parsley

1. Put olive oil in a large saucepan over medium heat. Add garlic, carrot, celery and onion then cook, stir occasionally. Add rosemary and chickpeas, stir well. Pour enough water or chicken stock to cover the chickpeas. Cover and simmer for ten minutes. Use a blender or food processor to puree this mixture. Return mixture to pan. Add pasta, salt, pepper, and parsley and serve.
