Chicken and Oats Soup


This soup is an easy and classic soup made in Saudi homes. Simple recipes like this is what I prefer to make for lunch. I usually use sea salt to flavor soups because it’s so much stronger than table salt. That being said use a small amount and taste to make sure you do not add too much. What can I say I like my salt. I blame it all on my grandparents who could not get enough of the stuff.

1/2 tablespoon olive oil
2 boneless and skinless chicken breasts, cut into small cubes
8 cups chicken broth
10 tablespoons oats
1 large zucchini, sliced
2 teaspoons ground cardamom
2 teaspoons cumin
1/2 white onion, diced
1 garlic clove, diced
Salt and pepper, to taste

1. In a saucepan on medium heat add olive oil, onion and garlic. Cook until tender then add chicken, browning on both sides and add cardamom, cumin and oats, mix.

2. Add zucchinis and then carefully pour in chicken broth. Bring to a full boil then reduce to low and cover. Allow to cook for 20 minutes.

Yields: 3 servings

  • Salam alaikum wa ramatullahi wa barakatu sister Noor! Oh my gosh we have been missing out on this delicious soup for years! I kept avoiding it because I thought oats in soup was weird and didn’t expect to like this as much as we all did. I think it is one of our favourite soups now I see why it is the national soup of a whole country. I will make this again for sure insha Allah. Also a nice soup to have during Ramadan.     • Wa Alaykum Salam lol you know I was the same way I was like eww oats bc growing up I eat it for breakfast with sugar, butter and milk. But OMG it is so good in soup also you must try the chicken one on here with semolina bc I was the same way with that one but it is SO good mashAllah.
