Baked Kofta and Potatoes

1/2 kg ground lamb (or lean beef)
1 white onion, minced
2 potatoes, cleaned, peeled and sliced
1 teaspoon black pepper
1 teaspoon ground cumin
1/2 teaspoon ground cinnamon
1 teaspoon ground coriander
1 teaspoon salt
2 garlic cloves, minced

1 cup water
juice from 1/2 lemon
1 teaspoon salt
4 tablespoons tomato paste

1. In a mixing bowl add lamb, onion, salt, pepper, cumin, cinnamon, coriander and garlic, mix well. Shape meat into golf size balls. In a small bowl, add tomato paste, lemon, salt and water, mix well.

 2. In a round 9 inch baking pan, add kofta, in between each meatball place a potato slice. Pour sauce all over the top. Cover with foil and bake in a pre-heated oven at 350 F for one hour, or until potatoes are tender.

Yields: 4 servings

    Salam alaikum, this was good but I found it had too much liquid while cooking. I would reduce the water if I were making it again. To remedy this I uncovered it towards the end of the cooking time. I added some ras al hout (Moroccan spice mixture) to these but I found it still a little bland. Next time I will try bahrat spice instead. I’d like to invite you to view my recipes, well they are not all my own but delicious ones with all the credit to where I got them from on Salam alaikum

    Thats very odd you have those issues. I have made this several times and that small amount (1/2 cup water) has always evaporated. I also always use lean ground beef maybe you did not and that was just grease? Also if you cover it the water will not evaporate it will actually make more water from the steam. This is just a simple kofta dish which is the Arabs version of hamburgers so it should not have to much taste..

    Salam alaikum wa ramatulah wa barakatu sister, well that anonymous person was me, UmmBinat before we met in your online cafe. I will try the recipe again. But let me clarify that I am supposed to cover it correct? As that is what the recipe states. I had used lean or extra lean ground beef the first time and will do so again. I will let you know how it turns out after you clarify insha Allah.

    Asalaam alaykum Noor.
    I made this recipe last weekend and it turned out wonderful! The only thing I did different was I made an oblong shape for the kofta and I cooked them in a pan before heating them up with the tomato sauce (I’m always paranoid that the kofta will break apart in the sauce without pre-grilling them).
    I tripled the recipe to distribute some food to some people, and the only thing I wouldn’t multiply next time is the black pepper (it was spicier than I had intended).
