Mediterranean Bread

1-1/2 cups warm water
2 teaspoons lemon juice
2 eggs, beaten
2 tablespoons tomato paste
2 tablespoons + 1 teaspoon olive oil
4-1/2 cups bread flour
1 cup toasted pine nuts
1/4 cup sun dried tomatoes, chopped
1 tablespoon + 1 teaspoon sugar
1 teaspoon salt
2 teaspoons instant yeast

1. Mix water, lemon juice, eggs, and tomato paste together and pour into the bread pan. Add olive oil, half the flour, pine nuts, tomatoes, salt, and sugar. Add the remaining flour. Make a small hole and add yeast.

2. Fit the pan in the bread machine set to express bake, medium crust, and 2 pound loaf size.

Yields: 12 servings
