Musakhan is definitely one of the most popular recipes of Palastine, and I’ve always loved it. The flavors mesh so well together and leave you with this mouth watering dish. I’ve made the more traditional way in the past, but I decided to do something a little different, yet a little the same. This is an overall simple recipe that anyone can whip up, and you only need one pan to cook it all.
Arabs love french fries with almost everything, especially in wraps like sharwarmas. After living here for so many years, it’s something that I now love too, it just tastes so good. Musakhan is a dish that is flavored with sumac and olive oil, I buy some really nice oil that’s actually imported from Palestine (zatar too). I used chicken breasts in this dish, since it’s a little healthier and I prefer white meat, all the same ingredients and fries. This is cooked in the pan together with the oil, and then layered on fresh pita. All you so is scoop up a little of everything with your hands, and go to town.
4 skinless and boneless chicken breasts, cut in half and then into strips
2 large potatoes, cut into thin sticks
1/2 small onion, diced (I used the food processor)
1/2 teaspoon ground allspice
1 tablespoon sumac
1 teaspoon salt
1 teaspoon pepper
2 garlic cloves, diced
1/4 cup olive oil
1/4 chopped rocket (jajir)
1. In a large bowl, add half of the oil, chicken, onion, garlic, allspice, sumac, pepper and salt, mix.
2. In a saute pan on medium heat, add the remaining olive oil. Place the fries around the pan in a circle, leaving the middle area open. Add the chicken in the middle, cover and allow to cook for 20 minutes, flipping half way through. Cook until thoroughly done and the food is a little crispy.
3. In a serving bowl, add pita, then layer chicken and fries, sprinkle rocket on top.
