This is one of my favorite Sweet recipes to make during Ramadan because it tastes great and even more importantly, it’s simple. The last thing I want to do during The Holy Month is spend hours in the kitchen, no thanks. All of my favorite Arabic sweets are just simple little things made with dates. Last week when we were out I came across a rolled logged version that was dates on the outside and one had coconut inside and the other pistachios, I can’t wait to make it myself.
So we’re almost half way through already, it’s going fast and I have to admit that this is one of my best Ramadans so far. I have been really good at focusing on Allah and not worrying about food this year. As soon as we had iftar today I had my husband drive me to Starbucks and I bought an xxxx large cappuccino, it was so good since I didn’t have coffee these last few weeks and perfect with these. How is your fasting going?
1 cup dates, pitted (I use sukhari which is soft)
1 tablespoon butter
1 teaspoon roasted sesame seeds
1/4 teaspoon ground cardamom
1. In a bowl, add dates and cardamom, mix well. In a skillet on medium heat, add butter. Add the date mixture into the pan, add mix up, allowing the dates to heat and soften.
2. With a plastic bag on your hand carefully shape into small balls about the size of a marble. Roll in roasted sesame seeds.
Yields: 1 dozen
