When it’s hot outside, the last thing anyone wants to be doing is cooking in a kitchen so these are a Summer favorite around here when we’re craving sweets. I grew up eating these cookies. My brothers and I would get so excited when our momma would make them. They sure do not look like much, but when you taste them you will quickly find out that they are pretty much the best cookie ever.
As you know by now I’m obsessed with my nonsticking baking mats. I use them for everything in the kitchen from baking to rolling dough. They just work! I also use them in this recipe to allow the cookies to cool and they come off easy, but if you do not have any you can use parchment paper. Let me warn you ahead of time, though, you can’t eat just one, they are very addictive and will be gone before you know it.
3/4 cup sugar
1/4 cup milk
4 tablespoons unsalted butter
2 tablespoons unsweetened cocoa powder
1-1/2 cups old-fashioned rolled oats
1/2 cup crunchy peanut butter
Pinch of salt
1. Line a baking sheet with a nonstick baking mat.
2. In a saucepan on medium heat, add sugar, milk, butter and cocoa to a boil, stirring occasionally, allow to boil for 1 minute. Remove from the heat. Add the oats, peanut butter and salt, stir to combine.
3. Drop teaspoonfuls of the mixture onto the prepared baking sheet, and let sit at room temperature until cooled and hardened, about 30 minutes.
Yields: 2 dozen
