Last week my mother in law and I were sitting at the table talking about our love, food. We were having Saudi qahwa and she told me she had started making some for her that used ginger instead of cardamom. When she was growing up in the South people tended to use ginger in place of the cardamom since it was so expensive. I tried the ginger version and really did not like it as much since it’s a bit sharp, plus cardamom is my favorite spice.
She went on to say that people also would make coffee from date pits when they could not afford real coffee beans. They would simply roast the date pit lightly just like the bean, it would then become soft and they would crush it and make it just like the regular qahwa and adding whatever spice they had on hand if any. I have been really curious about this coffee and wanted to make it, but it looks like it may be a very long time before I am back in the kitchen again. You can read more about why here.
