For quite a while I have heard that chocolate and zucchini mix quiet well together and have wanted to try it. Yesterday I finally decided to make my family a ‘chocolate cake’ but with the added benefits of crisp zucchini, golden olive oil and fresh yogurt. I was extremely pleased with the outcome it was moister than any cake that I have ever had. You can sprinkle powdered sugar over the top like I have or serve with fresh fruit just make sure you do not tell anyone your secret healthy ingredients.
1 cup all-purpose flour
1/2 cup unsweetened cocoa powder
3 medium zucchinis, peeled and grated
1 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
1 cup sugar
1 teaspoon vanilla extract
1 large egg
1/4 cup olive oil
60 grams plain yogurt
2 tablespoons milk

Pre-heat
oven to 350F. In a large bowl add sugar, egg, milk and vanilla. With a hand
mixer beat. Carefully add flour, cocoa, baking soda, baking powder, salt, olive
oil and yogurt, mix well then fold in zucchini.

Add
mixture into a greased loaf pan. Bake for 45-50 minutes or until a toothpick
comes out clean.
Yields: 1 loaf
